Common name: Ostrich fern, fiddlehead fern
The tightly wound, immature fronds of Matteucia struthlopteris are considered a delicacy when cooked and command high prices in Canadian green grocers in the spring. Struthlopteris comes from the Greek words for ostrich and fern, Matteucia is named after Carlo Matteucci, a 19th century Italian physicist. This is the only plant in the genus.
